The way to some women’s hearts is by gifting her a sparkling diamond. 💍 Some can be wooed with a beautiful bouquet of flowers. 💐 Some are ecstatic when they receive a heart shaped box of chocolates. 🍫 Others might find the perfect gift to be something a little more intimate. 👙 Now don’t get me wrong…these are all lovely gifts…ones which I’ve been lucky enough to have received!  But now that I’ve gotten older, and I’d rather not have more “stuff” there is still a way to my heart that doesn’t involve a lot of money or even shopping for hours to find the perfect gift!  The way to this girl’s heart is through her stomach, and anybody who knows me knows there are 2 sure-fire things that’ll have me gushing with thanks and adoration…COFFEE & CHOCOLATE!!! Throw in a shot of bourbon and I’m yours for life!

Valentine’s Day is less than 2 weeks away, and no matter whether you’re celebrating with a special someone, spending Galentine’s Day with your girlfriends, or whooping it up by treating yourself, if ever there was a holiday that deserves a splurge, it’s this one!  I happened to be perusing (please don’t judge) the alcoholic beverage section of the grocery store a few weeks ago when I spotted this jug of Bourbon Cream!  Be still my heart!  What could possibly be better in my celebratory mug of coffee than bourbon cream?!?  But then I thought…ya know…if we’re talking celebrating love and devotion and all things mooshy, then I sure as heck better add some chocolate to this 🗝 2 My ❤ ☕️!

I started by making some dark chocolate (cause it’s healthier) and milk chocolate (cause it’s milkier) spoons in my handy dandy silicone spoon mold.  Once the spoons were set I drizzled them with melted white chocolate (cause it’s pretty) and sprinkled them with crushed dark chocolate covered espresso beans!  These would also be fun for the kiddos by replacing the espresso beans with sprinkles and putting one in a cup of hot chocolate for their Valentine’s treat!  Obviously the spoons are optional, but if you’ve got – or want to get – a spoon mold, then go for it!  It’s a little touch that goes a long way toward the specialness of this drink!

The drink itself is super simple to put together….a shot (or two) of the Brown Jug Bourbon Cream in a pretty mug, fill to near the top with good strong coffee, top with a squirt of whipped cream, sprinkle with shaved dark chocolate or crushed espresso beans, and serve with a chocolate spoon!  I know this is an indulgent coffee, and clearly not one I’d drink on a regular basis, but Valentine’s Day is most definitely a day to indulge and to share a little love with someone special!  And for me…nothing says love like coffee and chocolate…except coffee, chocolate, and bourbon of course! 😉

Ingredients
  1. 2 cups strong brewed coffee
  2. 2 shots bourbon cream
  3. 2 squirts canned whipped topping
  4. 2 tbsp crushed chocolate coated espresso beans
  5. 2 tbsp shaved dark chocolate
  6. Chocolate spoons ~ optional
Instructions
  1. Pour 1 shot of bourbon cream into each of two coffee mugs.
  2. Add 1 cup of coffee to each mug.
  3. Top with a swirl of whipped topping and crushed chocolate coated espresso beans or shaved chocolate.
  4. Serve with chocolate spoons if desired.
Notes
  1. Certainly add more or less bourbon cream as desired.
  2. If you prefer a sweeter drink, a drizzle of maple syrup is wonderful in this as well!

I love Christmas – I love having our house decorated, I love having friends and family filling our home with love and laughter, and I love giving and sharing with those I hold dear!  I love the food, the smiles, and of course, the many excuses to indulge in an occasional, or not so occasional, adult beverage!  I’m not a wine or beer drinker – I’m more of a whiskey kinda girl, but recently my BFF and I discovered hard seltzer water on one of our weekly Sam’s Club excursions!  We both really like the lightly flavored, low calorie, all natural, 100 calorie treat!  So when we decided to have our workplace Christmas Party at my house, I knew I needed to come up with a lighter cocktail featuring our new fave alcoholic beverage, and the delicious result is this Cranberry Lime Spritzer!

This particular group of co-workers is a unique bunch!  Two of us are the owners of the quilt shop, two of us are the owners of the longarm quilting service, two of us are regularly scheduled employees of the shop, and then we have a couple former employees who fill in when we need them.   Of course all of us came from other careers before working the quilt shop…we’ve got 2 retired teachers, a former hair stylist, a former x-ray tech, a farm wife, and a retired nurse!  On top of that we’re all moms, and many of us grandmas too!!!  Add in spouses – a retired teacher, another who works from home and also does our sewing machine repair, a city building inspector, a plant controller, a retired police officer, and a farmer (sounds like the start of a joke 😉) – and somehow this diverse group of people just clicks…and we always enjoy our time spent together!

I’ve tried two different kinds of hard seltzer, or sparkling water in this Cranberry Lime Spritzer…both of which is readily available at either Sam’s Club, your local grocery store, or liquor store.  We first found the White Claw at Sam’s…we love the 18 pack that features 3 flavors…Natural Lime, Black Cherry, and Ruby Grapefruit.  The Truly Spiked & Sparkling brand is available in 4 different flavors….Colima Lime, Grapefruit & Pomelo, Pomegranate, and Sicilian Blood Orange.  I’m not the least bit ashamed to say I’ve tried them all – and they’re all equally delicious!  However, for this cocktail I’ve used only the lime flavors, and both brands are equally as tasty in the finished spritzer!

What I really like most about this cocktail is it’s light refreshing flavor and that it’s not overly sweet!  How often can you enjoy a cocktail for only 100 calories?!?  C’mon…this is fantastic!!!  The slightly acidic flavor of the lime seltzer water combined with the sweetness of the cranberry juice, and the extra little punch of lime flavor from the fresh squeezed lime juice along with the Rose’s Lime Juice results in what I think is a perfect holiday cocktail! Not to mention the fact that it’s just such a beautiful drink…the bright red color is perfect for Christmas celebrations!

Ingredients
  1. 6 ounces Unsweetened Cranberry Juice, chilled
  2. 6 ounces Lime Hard Seltzer or Sparkling Water, chilled
  3. 1 tsp Rose's Lime Juice
  4. 1 tsp fresh squeezed lime juice
  5. Frozen fresh cranberries ~ optional
  6. Ice
  7. Lime slices
Instructions
  1. Fill a glass with ice.
  2. Pour in cranberry juice, then hard seltzer water.
  3. Add Rose's Lime and fresh lime juice, stir gently.
  4. Garnish with lime slices and a few frozen fresh cranberries, or as desired.
  5. Enjoy!

Two years ago my daughter and I were lucky enough to get to visit London.  While we were there we tried as many new (to us) restaurants and pubs as we possibly could!  Two girls can only eat so much food in 5 days, but boy we sure gave it a valiant effort!  😉  One of our favorite restaurants was called Strada, located on St.Katherine’s Docks.  We were able to enjoy a lovely alfresco Italian dinner while watching the people of London bustle by, and while admiring the beautiful ships that were moored there.  Of course after dinner we ordered dessert – this was vacation after all!  I had a light and refreshing limoncello soaked pound cake layered with berries and cream, which was heavenly!  But Anna’s dessert was one I’ve been thinking about for over 2 years now!  She ordered Affogato, and oh my, it was rich and decadent, and beyond delicious!  At least according to her – she wasn’t sharing…..not that I blame her one bit!

Affogato (Italian for drowned) is a traditional Italian dessert made of a scoop of vanilla ice cream or gelato “drowned” in a shot of espresso.  Ice cream and coffee?!?  C’mon….does it get any better than that???

To be perfectly honest, I’ve probably had more fun with this recipe than any other I’ve blogged!  First I had to figure out a healthier alternative to ice cream, and I’d been rolling around a couple ideas for popsicles anyway, so it seemed like a natural fit to use a dairy free popsicle in this recipe instead of ice cream.  I used coconut milk as the base, a little honey for sweetness, espresso and Kahlua for flavor, and dark chocolate covered espresso beans just because I wanted to.  And because they’re so good!!!

I probably spent as much time browsing Amazon for popsicle molds as I did planning the recipe!  Who knew there were so many?!?  I wanted small molds that used wooden sticks and was thrilled when I found these silicone molds!  They’re the perfect size, the popsicle easily pops out, and they’re adorable to boot!

Tip: Place the popsicle mold in a freezer safe dish before filling.  This makes it easier to get them into the freezer as the molds are flexible, and it’s quite messy when they spill over.  Just trust me on this one!  😉

I also had fun finding the demitasse coffee/espresso cups, the French Press coffee maker to make the espresso, and those little coffee spoons…..OH MY GOODNESS!!! Could they be any cuter?!?  I guess when it boils down to it, this was the adult version of the make-believe tea parties I used to have as a little girl.  Only this is much better because REAL coffee, REAL popsicles, and REAL Kahlua is involved!

Once I was ready to make the Affogato it was a simple matter of drizzling a little bit of Kahlua into each cup, dropping in a few extra chocolate covered coffee beans, then placing a popsicle in each cup and pouring over the espresso!  I was practically giddy with excitement – or maybe it was because I was overly caffeinated from “taste testing” the popsicles, coffee, and chocolate espresso beans!  But whatever it was, I could not have been more thrilled with the final outcome of this deceptively simple, yet impressive and decadent dessert!

They look AMAZING, don’t they?!?  I hope you’ll give them a try real soon!  For those of us who are coffee lovers it’s a sure bet that this will become a favorite dessert, and for the coffee haters out there (Mr. CEBH), just eat the popsicle!  They’re darn good no matter if you like coffee or not!

Tip:  There’s very little Kahlua in this recipe, but for those of you worried about the alcohol content, by all means just omit it from the recipe.  It will be a decadent treat with or without it!

For the Popsicles
  1. 1 can coconut milk, 13.66 ounces, full fat
  2. 1/4 cup Kahlua (optional)
  3. 2 tbsp honey, 3 tbsp if omitting Kahlua
  4. 3/4 cup strong brewed coffee
  5. 2 tsp instant espresso powder
  6. Handful of dark chocolate covered espresso beans
For the Affogato
  1. 10 Coffee & Kahlua Popsicles
  2. 5 tsp Kahlua
  3. 2 1/2 cups espresso or strong brewed coffee
  4. Handful of dark chocolate covered espresso beans
For the Popsicles
  1. Dissolve the instant espresso powder in the 3/4 cup strong brewed coffee.
  2. In a blender combine coconut milk, honey, Kahlua, and coffee/espresso.
  3. Blend until well combined.
  4. Prepare popsicle molds by placing a few chocolate covered espresso beans in each mold and fill according to directions with coconut milk mixture.
  5. Freeze until firm, preferably overnight.
For the Affogato
  1. Prepare the espresso or strong brewed coffee.
  2. In each of 10 small cups or bowls drizzle 1/2 tsp Kahlua and add 3-4 chocolate covered espresso beans.
  3. Place a frozen popsicle in each cup or bowl.
  4. Pour approximately 2 ounces of hot espresso or coffee in each cup.
  5. Enjoy immediately.

Today is all about celebrating!  Partly because it’s Friday, and we all know that’s reason enough, but also because it’s my birthday!  Today I turn the ripe old young(ish) age of 55.  I remember when I thought 55 was old.  When I was 16 I thought that if I managed to live to the age of 55 then I would have lived a good long life.  Funny how my perspective has changed!  Now, I still feel young at heart, and by embracing the Cook Eat Be Healthy Lifestyle I’m hopeful that my body will cooperate and give me several more years!  

When it comes to Cook Eat Be Healthy and alcohol I generally avoid it.  Not that I don’t enjoy an occasional drink – trust me – I do!  But most generally I prefer to avoid the sugar and calories that are inherently present in alcohol.  I don’t like beer.  I’ve tried to like wine but it’s all just bitter tasting to me and leaves me with a headache.  I do, however, enjoy a good, smooth, perfectly aged whiskey like the one I get from Cedar Ridge Winery & Distillery right here in Iowa!  There’s just something about this whiskey that makes it extra special, not the least of which would be the fact that it’s produced right here in I-OH-WAY!  😉

Back in the olden days (now I sound like my kids when they were little) and I’d drink whiskey it was mixed with diet soda.  Now that it’s been years since I’ve last had any pop, and since I intend to never drink it again, I needed a new way to enjoy my whiskey!  I do cook with it occasionally and that’s always results in a super delicious meal like my Triple ‘B’ Burgers.  But when I want to enjoy a celebratory cocktail on my birthday I wanted to mix my whiskey with something that I could feel at least a little bit better about!

So the end result was a recipe for Citrus & Honey Sour Mix!  I love lemons and limes.  Their tart bright citrusy flavor makes me happy.  But mixing straight up lemon and lime juice with whiskey….wow…..that’d make you pucker up!  😜  When I bought sour mix from the store I was disappointed by the flavor.  It wasn’t really all that sour – mostly it was just sickly sweet – probably due to high fructose corn syrup that was used to sweeten it.  YUK!  Once again using the Cook Eat Be Healthy rule of any occasional treat being a part of the plan if it’s homemade, I knew I could make my own sour mix and thereby enjoy a Whiskey Sour birthday cocktail!  

It was a simple process of juicing several lemons and limes and combining the juice with a honey and water simple syrup to make a Honey & Citrus Sour Mix that not only tasted deliciously sour, but also wouldn’t bust my live-it!

Ingredients
  1. 2 cups fresh squeezed lemon and lime juice
  2. 1 cup honey
  3. 1 cup water
Instructions
  1. Heat water to a boil in medium saucepan.
  2. Remove from heat and stir in honey until it completely dissolves.
  3. Set aside while juicing the citrus fruit.
  4. Squeeze as many lemons and limes, in any combination to yield 2 cups of juice.
  5. Strain pulp from juice.
  6. Stir juice into honey water until well mixed.
  7. Pour into jar and refrigerate for up to 2 weeks.
Notes
  1. For this batch I squeezed 7 lemons and 5 limes.
  2. To mix a whiskey sour, I use 2 parts sour mix to 1 part whiskey, but you can mix it to whatever strength you prefer!
